I think for fabulous friday favs, I am going to start sharing some favorite recipes, too, along with whatever favorites are bringing me joy that week that I want to share with you. And you are really going to have to go make this recipe today, because today is kind of a holiday and your family and/or friends will love you. I have shared my adoration for baking here before ~ I’m a little obsessed with chocolate chip cookies and recently went on a quest to perfect my recipe. The problem with my love for baking is that I also proceed to eat whatever I’m making ~ the dough, the baked product… all of it. You know, to make sure its not poisonous before I pass it along to my friends and family. I also love making homemade candy. At Christmas time I always make divinity, which is time consuming, and sometimes takes a few batches before I get it just right. But it’s fluffy-white-heavenly-wonderfulness, and it is so worth it! Today, being Valentine’s Day, I got the bug to make something sweet. I thought it would be fun for the kids to take a little something to their teachers (since we aren’t allowed to share any treats of any kind with the students in their classes… so sad). I was going to make our favorite sugar cookies, but then I suddenly had a hankering for marshmallows, and I remembered I had made some years ago, but had not tried them again since. And then I remembered the kosher gelatin I had just ordered (to make homemade gummy bears ~ so fun!), and I knew it was time to try them again! They were really quite easy and did not take very long, and oh my. You guys. They turned out so ridiculously amazing. They are fluffy-sweet-stickiness, and when you dip them in chocolate…? Forget it.
I used Healthy Green Kitchen’s recipe and also used the grass-fed gelatin that can be purchased at Amazon. Did you know that gelatin has a ton of health benefits?? I was not aware. This dear family is just a little too good looking. Like more than should legally be allowed in one family. Don’t you think? And, on top of that, they are even more beautiful on the inside. These two little ones have the sweetest dispositions I think I have ever seen in kids. And their parents have the most genuine and caring hearts. My family has loved getting to know this family even better over the past year since these photos were taken. My husband is 6 foot 5 and has a loud voice, and little kids either are scared to death of him, or they love him. It melts my heart every time these two see him coming ~ they go straight to him and jump in his arms. I love that we were able to capture these special moments for them to remember this time in their life.
